With only 4 ingredients (it can even be made with just 3!) it's dangerously quick to whip up too.

What is Biscoff?
Biscoff is a particular brand of cookie butter - it is a thick, creamy spread with a similar colour and texture to peanut butter, made using crushed Lotus brand speculoos cookies.
The predominant flavour of Biscoff spread is cinnamon with a hint of caramel. You can find Biscoff in the spread section of your supermarket alongside products like Nutella and peanut butter.

- white chocolate
- Lotus Biscoff spread - I used smooth, you could substitute with crunchy
- Lotus Biscoff biscuits (cookies) - for decoration (optional)

How to make Biscoff fudge
- Combine sweetened condensed milk and white chocolate in a saucepan.
- Stir over low heat until chocolate is melted, then add Biscoff and mix to combine.
- Pour the fudge mixture into a greased and lined baking tin.
- Sprinkle crushed Biscoff cookies over the top of the fudge then place in the fridge to set.
Top tips for the best result
- You could melt the white chocolate and condensed milk together in the microwave if you prefer, I find the stovetop works better for me because the white chocolate is less likely to seize.
- If you can't get the Biscoff fudge out of the tin once it's set, just dip the base of the tin in hot water for 1 - 2 seconds and it should slide right out.
Variations
- Add a light sprinkle of flaky sea salt on top when you serve this Biscoff fudge for a lovely sophisticated touch.
- Swap out the cookie crumbs on top for milk or dark chocolate chips.
Storage
Sliced fudge can be stored in an airtight container in the fridge for 2 - 3 weeks.
Keep in mind the crushed biscuits on top will get soft.

Biscoff Fudge
Ingredients
- 395 g sweetened condensed milk
- 400 g white chocolate broken into squares
- 150 g Biscoff spread I used smooth
- 3 - 4 Biscoff cookies crumbled (optional - for decoration)

Instructions
- Grease and line a 20 cm square baking tin with parchment paper (leaving extra overhang for easier removal) and set aside.
- Combine sweetened condensed milk and white chocolate in a medium saucepan.395 g sweetened condensed milk400 g white chocolate
- Stir on the stovetop over low heat until chocolate is melted, then add Biscoff and mix well to combine.150 g Biscoff spread
- Pour the fudge mixture into the prepared tin and smooth the top.
- Sprinkle crushed Biscoff cookies over the top of the fudge (pressing down a little to help them stick) then place in the fridge to set for 1- 2 hours.3 - 4 Biscoff cookies
- Remove the fudge from the tin then slice into pieces and serve.
Notes
- You could use the microwave to melt the white chocolate and condensed milk if you prefer, I find the stovetop works better for me because the white chocolate is less likely to seize.
