Two of my favourite sweet things in one - Biscoff cookie butter in a no-bake slice. If you are a fan of Biscoff spread you have to try this slice.
The base of this Biscoff slice is made with sweetened condensed milk and crushed biscuits just like a classic no-bake slice, but for this recipe, we are using Lotus Biscoff biscuits (Biscoff cookies) which gives us even more of that extra rich Biscoff flavour!

What is Biscoff
Biscoff is the brand name given to a type of "cookie butter" spread made by Lotus Bakeries. It is thick and creamy with a similar consistency to peanut butter or Nutella.
It is made using crushed speculoos cookies.

- Lotus Biscoff spread
- Lotus Biscoff cookies (biscuits)

- salted butter
- milk chocolate
- vegetable oil

How to make Biscoff slice
- Melt the sweetened condensed milk and butter together in a large bowl.
- Mix in Biscoff spread.
- Add in crushed biscuits and mix well.
- Tip the base mixture into a greased and lined tin and spread evenly.
- Melt together the chocolate and vegetable oil until smooth.
- Mix through more Biscoff spread, pour chocolate over the base and place in the fridge to set.
Top tips for the best result
- It's important to grease and line the baking pan so you can get it out once it's set. Leave some parchment paper overhanging to give you something to grip onto as well.
- I use a food processor to crush the biscuits, you could also pop them into a plastic bag and crush them with a rolling pin.
- If it's stuck in the tin, sit the base of the tin in hot water for a second or two - this melts the butter slightly and it will come right out.
- Once your Biscoff slice has set, take it out of the refrigerator for 10 minutes prior to cutting it into squares.
Storage
Store this slice in an airtight container in the fridge.

Biscoff Slice (No Bake)
Ingredients
- 150 g sweetened condensed milk
- 70 g salted butter
- 50 g Biscoff spread (room temperature)
- 250 g Biscoff cookies
Top layer
- 200 g milk chocolate
- 1 tablespoon vegetable oil
- 1 tablespoon Biscoff spread (room temperature)
- 1 tablespoon Biscoff spread (warmed in the microwave) optional drizzle

Instructions
- Grease and line a 20cm (8") square baking pan with baking paper (leaving some overhang) and set aside.
- Place the sweetened condensed milk and butter in a large bowl, and place in the microwave to melt the butter.150 g sweetened condensed milk70 g salted butter
- Once butter is melted add in Biscoff spread and mix to combine.50 g Biscoff spread (room temperature)
- Add in crushed biscuits and mix well.250 g Biscoff cookies
- Tip the base mixture into the prepared tin, pressing into an even layer and smoothing the top (use the back of a large spoon or a silicone spatula for this). Use a piece of kitchen towel to blot any oily residue on the top.
Top layer
- Place chocolate and vegetable oil into a small bowl.200 g milk chocolate1 tablespoon vegetable oil
- Microwave in 30-second bursts (mixing between each) until chocolate is melted.
- Mix in Biscoff spread then pour chocolate mixture over the base and place in the fridge for 2-3 hours or until set.1 tablespoon Biscoff spread (room temperature)
- Once the slice has set, drizzle with warmed Biscoff (optional - see my notes) and then cut into slices.1 tablespoon Biscoff spread (warmed in the microwave)
Notes
- It's important to grease and line the baking pan so you can get the slice out once it's set. Leave some parchment paper overhanging to give you something to grip onto as well.
- I use a food processor to crush the biscuits, you could also pop them into a plastic bag and crush them with a rolling pin.
- If you can't get the slice out, sit the base of the tin in hot water for a second or two.
- For the Biscoff drizzle - if you would like to serve these with the drizzle set firm, place the slice back into the fridge to allow the Biscoff to cool and firm up.
