    Baileys Fudge is a rich, smooth chocolate fudge recipe with a boozy kick of Baileys Irish Cream liqueur.

    This sweet treat is made in the microwave, so it's super quick and with the addition of Baileys it tastes like Christmas!

    How to make Baileys fudge

    1. Place sweetened condensed milk and both types of chocolate into a microwave-safe bowl.
    2. Microwave in 30-second bursts (mixing between each) to melt.

    1. Mix in Baileys and vanilla (if using).
    2. Pour the fudge mixture into a greased and lined baking pan then place in the fridge to set.

    Top tips for the best result

    • Sprinkle over any decorations before the fudge goes into the fridge.
    • If your fudge won't release from the pan, just sit the base of the pan in hot water for about a second and it will slip right out.

    Baileys chocolate fudge can be stored in a sealed container in the fridge for up to 2 weeks.

    Ingredients

    • 395 g sweetened condensed milk
    • 360 g dark chocolate broken into squares
    • 240 g milk chocolate broken into squares
    • ⅓ cup Baileys Irish Cream liqueur
    • 1 teaspoon vanilla extract optional

    Instructions

    • Grease and line a 20 cm (8-inch) square baking tin with baking/parchment paper and set aside.
    • Place sweetened condensed milk and both types of chocolate into a microwave-safe bowl.
      395 g sweetened condensed milk
      360 g dark chocolate
      240 g milk chocolate
    • Microwave in 30-second bursts (mixing between each) until melted (for me it takes 90 seconds). See my notes.
    • Stir in Baileys and vanilla (if using).
      ⅓ cup Baileys Irish Cream liqueur
      1 teaspoon vanilla extract
    • Pour the fudge mixture into the prepared tin, smooth the top using a silicone or rubber spatula, and then place in the fridge for 1- 2 hours to set.
    • Cut into portions.

    Notes

    • You can make this fudge on the stove-top using a saucepan and stirring over low heat until melted.
    • If you would like to add decorations (like my photos) then sprinkle these on before the fudge goes into the fridge to set.
    • If you are having trouble getting the fudge out of the pan, sit the base in hot water for a second and it will slide out.
