    This easy Oat Slice is a rich and chewy snack for the whole family.

    Packed with rolled oats, coconut and chocolate chips, this slice recipe is great for kids' lunchboxes or as an afternoon treat for adults.

    How to make oat slice

    1. Combine the melted butter and light brown sugar in a bowl.
    2. Then add golden syrup and mix in the egg.

    • Be sure to use shredded coconut (not desiccated coconut) to make this oat slice. This is one of the ingredients that gives this slice its moist and chewy texture.

    Oat Slice variations

    Instead of chocolate chips, substitute dried fruit such as sultanas, raisins (chopped if large), dried cranberries or blueberries.

    This oat slice can be kept at room temperature in an airtight container for 3 to 4 days.

    Oat Slice is a quick and easy, one-bowl treat that will be a hit with the whole family. With rolled oats, coconut, and chocolate chips they are also great for lunch boxes.

    Ingredients

    • 130 g salted butter melted
    • 140 g light brown sugar
    • 2 tablespoons golden syrup
    • 1 egg
    • 150 g plain flour (all-purpose flour) sifted
    • 100 g rolled oats
    • 60 g shredded coconut (see my notes)
    • 1 teaspoon baking powder sifted
    • 150 g chocolate chips

    Instructions

    • Preheat oven to 160c.
    • Grease and line a 20 cm (8") square baking tin with baking/parchment paper (leaving some overhang for removal) and set aside.
    • In a large bowl mix together melted butter and light brown sugar.
      130 g salted butter
      140 g light brown sugar
    • Mix in golden syrup and egg.
      2 tablespoons golden syrup
      1 egg
    • Add plain flour, rolled oats, shredded coconut and baking powder.
      150 g plain flour (all-purpose flour)
      100 g rolled oats
      1 teaspoon baking powder
      60 g shredded coconut
    • Mix well to combine then fold in chocolate chips.
      150 g chocolate chips
    • Spoon the mixture into the prepared pan and smooth the top with a silicone spatula.
    • Bake for 20 to 25 minutes until golden and firm to the touch.
    • Allow the slice to cool in the tin for 10 minutes, then remove it and place it on a wire rack to cool then slice into squares.

    Notes

    • Use shredded coconut (not desiccated coconut). This helps give the slice its moist and chewy texture.
