    Lime Slice with Pomegranate Frosting

    A super easy no bake Lime Slice with Pomegranate Frosting - tangy lime juice and coconut in a crushed biscuit base, then topped with a pomegranate frosting.

    This little no bake beauty is my Lime Slice with Pomegranate Frosting. The flavour of tangy lime juice combined with coconut and condensed milk in the crushed biscuit base, with an easy icing featuring pomegranate juice. Plus the pomegranate juice turns the icing a gorgeous (natural!) shade of pink. This Lime Slice not only tastes delicious, but it's also as pretty as a picture too!pieces of slice with pink icing on a white plate

    No bake desserts would have to be my favourite kind of desserts to "bake". Much less margin for error! I've included links at the bottom of this post to some of my favourites.

    Ingredients you will need for this recipe

    • Arnott's Marie biscuits
    • limes - juice and zest
    • condensed milk
    • desiccated coconut
    • butter
    • pomegranate juice
    • icing/confectioners sugar

    How to make this recipe

    1. Place the biscuits into a food processor and process into fine crumbs.
    2. Place biscuit crumbs into a large bowl along with condensed milk, desiccated coconut, melted butter, lime juice and lime zest then mix to combine.images showing how to make recipe
    3. Press the biscuit crumb mixture into a greased and lined tin.
    4. For the frosting, mix together the icing sugar, room temperature butter and pomegranate juice until smooth.photographs showing how to cook recipe
    5. Spread frosting evenly over the biscuit base.
    6. Sprinkle with extra coconut and refrigerate until firm.images showing process of making this recipe

    My top tips for making this recipe

    • The tin I have used is 20cm x 20cm (8" x 8") - a little bigger or smaller would be ok too.
    • If you haven't got a baking tin this size, keep in mind that because this slice is no bake you don't have to limit yourself to a baking tin. Maybe you might have something else the right size such as a plastic container like tupperware etc.
    • If you are using a fresh pomegranate to make the pomegranate juice (I did) then this post will show you an easy way to get the seeds out. Then I just crushed the seeds through a fine sieve to get the juice.

    Serving suggestions and ideas for add-ins

    • Even though we aren't baking this lime slice, we still need to grease and line the baking tin/pan with parchment paper, leaving some overhanging on each side. This gives you something to grip onto to pull the slice out of the tin. If it's still stuck, sit the base of the tin in hot water for a few seconds then give it another tug and it should come out.
    • The coconut I have sprinkled over the top of this slice could be replaced with lime zest if you like.

    Ingredients

    Base Ingredients

    • 250 g Marie biscuits
    • 3 limes - juice and zest approx ⅓ cup of juice
    • 90 g butter melted
    • 90 g desiccated coconut 1 cup
    • 200 g condensed milk

    Frosting Ingredients

    • 3 tablespoon pomegranate juice I used fresh (see my notes)
    • 300 g icing/confectioners sugar 2 cups
    • 70 g butter at room temperature
    • 1 tablespoon desiccated coconut for sprinkling

    Instructions

    • Grease and line a 20cm x 20cm (8" x 8") baking tin (see my notes).
    • Place the biscuits (250g) into a food processor and process into fine crumbs.
    • Place biscuit crumbs into a large bowl along with condensed milk (200g), desiccated coconut (90g/1 cup), melted butter (90g), lime juice and lime zest (from 3 limes - approx ⅓ cup of juice) then mix well to combine.
    • Press base mixture into the prepared tin and smooth the top.
    • For the frosting, mix together the icing sugar (300g/2 cups) room temperature butter (70g) and pomegranate juice (3 tbsp) until smooth.
    • Spread frosting evenly over the biscuit base. Sprinkle with extra coconut and refrigerate until firm.

      Hi there do you use sweetened condensed milk for this recipe or just plain condensed milk?

        Hi Chris, I use sweetened condensed milk. I have not seen condensed milk for sale that isn't "sweetened"? Could you mean evaporated milk? L x
