    This quick and easy Lamb Rub recipe will make your lamb dishes sing!

    My homemade lamb rub uses a mixture of pantry spices to enhance the taste of lamb recipes like ribs, a rack of lamb or lamb cooked on the BBQ or under the grill.

    The spice combination makes an awesome dry rub for lamb chops, a great way to bring some new flavours to a weeknight family favourite.

    • garlic powder - I use powder instead of fresh garlic cloves so that any leftover rub can be stored.
    • ground cumin
    • ground coriander
    • paprika (sweet)
    • ground cloves
    • cinnamon
    • cardamom
    • salt

    How to make lamb rub

    1. Place the spices into a small bowl.
    2. Give them a good mix then use or store.

    Storage

    Store in an airtight container away from sunlight.

    Should keep for up to 6 months - depending on the expiry date of the individual ingredients used.

    Top tips for the best result

    • If you are going to make a larger quantity and store it for later use, I like to pop in a silica sachet (from a vitamin container so it's food-safe) for extra insurance against moisture.
    • Give it a mix before using it.
    • To help keep your dried spices in general (like garlic powder) from clumping and going hard, I remove the plastic sprinkle insert and add a little silica sachet directly into the jar.
    • I also insert the peel-off foil from the top of the jar into the lid before I reclose it - this gives a better seal - thanks, Mum!

    Ingredients

    • 3 teaspoon garlic powder
    • 2 teaspoon ground coriander
    • 2 teaspoon ground cumin
    • 2 teaspoon sweet paprika
    • ¼ teaspoon ground cloves
    • ¾ teaspoon salt
    • pinch of cinnamon
    • pinch of cardamom

    • In a small bowl, combine garlic powder, ground coriander, ground cumin, sweet paprika, ground cloves, a pinch of cinnamon, a pinch of cardamom and salt.

      How much of the rub do I use on a lamb shoulder, please.

        Hi Gill, I would mix 1 -2 teaspoons of the rub with a little olive oil. I hope you enjoy your lamb!
