How to make rocket salad
- Combine the dressing ingredients in a small jar.
- Put on the lid and shake to mix (or whisk together in a small bowl).

- Place rocket and shaved parmesan in a large bowl and toss to combine.
- Pour over dressing then give a final toss and serve.

Top tips for the best result
- Thinly shave the parmesan using a vegetable peeler.
- You can use balsamic glaze instead of balsamic vinegar but only use about half the amount.
Storage
Rocket salad is best served immediately.
Not suitable to freeze.

Ingredients
- 120 g rocket (arugula)
- 25 g shaved parmesan cheese see my notes
Dressing
- 1½ tablespoons olive oil
- 3 teaspoons balsamic vinegar see my notes
- ¼ teaspoon fresh black pepper

Notes
