    • fresh rocket leaves - a variety of lettuce known as arugula in the US and Canada
    • parmesan cheese - can substitute pecorino cheese
    • olive oil
    • balsamic vinegar
    • black pepper

    How to make rocket salad

    1. Combine the dressing ingredients in a small jar.
    2. Put on the lid and shake to mix (or whisk together in a small bowl).

    Top tips for the best result

    • Thinly shave the parmesan using a vegetable peeler.
    • You can use balsamic glaze instead of balsamic vinegar but only use about half the amount.

    Storage

    Rocket salad is best served immediately.

    Not suitable to freeze.

    Ingredients

    • 120 g rocket (arugula)
    • 25 g shaved parmesan cheese see my notes

    Dressing

    • 1½ tablespoons olive oil
    • 3 teaspoons balsamic vinegar see my notes
    • ¼ teaspoon fresh black pepper

    • Combine the dressing ingredients in a small jar.

    Notes

    • Use a vegetable peeler to thinly shave the parmesan.
    • If you are substituting balsamic glaze for the balsamic vinegar, you only need about half the amount.
