Rocket Salad

Rocket Salad is an easy and versatile 5-minute side salad. Made with fresh rocket (arugula), shaved parmesan and a zingy balsamic dressing.

Ingredients

  • 120 g rocket (arugula)
  • 25 g shaved parmesan cheese see my notes

Dressing

  • tablespoons olive oil
  • 3 teaspoons balsamic vinegar see my notes
  • ¼ teaspoon fresh black pepper

Instructions

  • Combine the dressing ingredients in a small jar.
    1½ tablespoons olive oil, 3 teaspoons balsamic vinegar, ¼ teaspoon fresh black pepper
  • Put on the lid and shake to mix.
  • Place rocket and shaved parmesan in a large bowl and toss to combine.
    120 g rocket , 25 g shaved parmesan cheese
  • Drizzle over dressing then give a final toss and serve.

Notes

  • Use a vegetable peeler to thinly shave the parmesan.
  • If you are substituting balsamic glaze for the balsamic vinegar, you only need about half the amount.
