These delicious, creamy Prawn Sandwiches are easy to make and packed with flavour, perfect for a quick and tasty lunch or brunch.

It tastes just like a prawn cocktail complete with marie rose sauce, but in between two pieces of soft, fresh bread - a prawn cocktail sandwich!
These indulgent prawn sandwiches make lunchtime (or any time, actually) just a little bit special - a real treat!
Prawn sandwiches are perfect for a champagne brunch with the girls too. Cut each sandwich into four triangles (or into three strips) and you've got lovely finger food which leaves a free hand for your drink - nailed it!

- cooked prawns
- bread slices - I used wholemeal bread
- marie rose sauce - I made my own (it's such an easy recipe!) or store-bought is fine too
- fresh chives
- garlic powder - optional
- butter - for spreading on the bread
- salt - as needed

How to make prawn sandwiches
- Pat the prawns dry with paper towel.
- Chop the prawns then combine with the marie rose sauce, garlic powder and chives.
- Butter the bread.
- Spread prawn filling over one slice of bread, then top with another slice of bread, cut and serve.
Top tips for the best result
- Dry the prawns well with kitchen towel before adding them to the sauce ingredients.
- Don't leave the prawn meat too chunky or it will be tricky to keep in between the bread as you eat it.
- Add salt to the prawn mixture right at the end, you may only need a pinch.
Serving suggestions
- Be all posh and cut the crusts off your bread before you make the sandwiches (stash the crusts in the freezer to make breadcrumbs at a later date).
- Make fancy finger sandwiches by slicing each sandwich into thirds.
Variations
- Substitute plain mayonnaise for marie rose sauce.
- Avocado - add a few slices or smash some up and spread on one side of the bread.
- Lettuce leaves - make sure they are dry or you will have soggy sandwiches.
- Swap out the brown bread for white if you'd rather.
Storage
These prawn sandwiches are best eaten fresh, but can be made up to 1 day ahead and kept in an airtight container in the fridge.
Not suitable to freeze.

Prawn Sandwiches
Ingredients
- 200 g cooked and shelled prawns chopped
- 2 tablespoon marie rose sauce
- 2 teaspoon finely chopped chives
- ¼ teaspoon garlic powder optional
- ¼ teaspoon fresh black pepper
- 4 slices brown (wholemeal) bread
- butter for spreading on bread
- fine salt to taste

Instructions

Notes
- The prawns need to be chopped fairly small - this will help them stay in the sandwich.
