How to make Tim Tam balls
- Place the biscuits in a food processor, and process until fine crumbs.
- Add the mix-ins. Milo for the milk chocolate version, then a quick process to incorporate.
- Glace cherries for the dark chocolate version, then process to chop cherries.
- Dried cranberries for the white chocolate version, then process to chop cranberries.
- Add the condensed milk (a small amount at first).
- Process until the mixture comes together enough to be rolled into balls.
- Roll mixture into balls, then roll in coconut and refrigerate.
What are Tim Tams
Tim Tams are an Australian biscuit made by Arnott's that consists of two rectangle-shaped biscuits or cookies sandwiched together by a cream filling then covered in chocolate. The original version has a chocolate cream filling that is then covered in milk chocolate.
These days they come in many different variations - including white or dark chocolate as well as many different filling flavours.

My top tips for making this recipe
- A packet of traditional milk chocolate Tim Tams is 200g with 11 biscuits. Dark ones are the same. BUT white chocolate packs are only 165g with 9 biscuits in each pack. I bought 3 packs of white chocolate Tim Tams to get to the 400g for the recipe. You could use just 2 packs and adjust the condensed milk and dried cranberries accordingly.
- Add the condensed milk to the crushed biscuits gradually. This is important to get the right consistency for your truffles. You want to add enough so that the mixture isn't too dry (or it won't be able to roll it into balls without it breaking apart) but not too much or the mixture will be too soft and your balls won't keep their shape very well.
- The mix-ins can change the consistency of the mixture as well. The glace cherries are coated in a sugar syrup, which also adds additional moisture to the mix - so I found the dark chocolate variation needed the least amount of condensed milk added.
- I suggest working quickly when forming the balls and rolling them in the coconut as soon as they are mixed. The mixture will get drier the longer it is left, plus the coconut won't stick to the outside of the balls if they are dry.
- If you get interrupted (like me) during the rolling process and find the balls aren't forming properly, just reprocess the mixture with a little extra condensed milk. This should bring the mixture back together.
- I store them in the fridge (this way they hold their shape) but take them out about 10 minutes before serving them.

These were awesome, the white were my favourite. Thanks for the recipe.
You're most welcome, Andreas. I like the white ones too!
