    How to get the family to enjoy broccoli? Charred Broccoli is the answer you have been looking for, and you can make this flavour-packed vegetable side dish in 20 minutes.

    Deliciously tender-crisp charred broccoli is an easy recipe without many ingredients because the secret to the extra boost of taste in this roasted broccoli recipe is all in the cooking method.

    Simply tossed in olive oil and salt, the broccoli florets are then roasted until you get a slight char, which gives the broccoli a whole new depth of flavour.

    We don't want a sheet pan full of burnt broccoli though - just nicely charred at the edges!

    I have to be honest, I never thought I would be eating half a head of broccoli with my dinner without protest and wanting to share the recipe with you - but this charred broccoli recipe has changed that!

    How to make charred broccoli?

    1. Cut broccoli into florets.
    2. Toss to coat florets in olive oil and salt.

    2. Spread out in a single layer then bake.

    Top tips for the best result

    • Cut the florets with thicker stems into 2 or 3.
    • Gradually add the oil and salt while you toss the broccoli pieces, this will give you better coverage. Otherwise, you risk all of your seasoning getting stuck in the top of one of those little broccoli tree tops.
    • Space the broccoli out on the baking tray, leaving space between.
    • No slivered almonds? Use flaked instead, but only half the amount.

    Storage

    Allow the charred broccoli to cool, then place the leftovers in an airtight container in the fridge for 3 to 4 days.

    Charred broccoli is a great way to get your family to eat broccoli! Lightly charred in the oven, tender-crisp florets are tossed in parmesan cheese and a squeeze of lemon juice.

    Ingredients

    • 2 large heads of broccoli (about 1 kg/2 lbs)
    • 2½ tablespoon olive oil
    • ¼ teaspoon salt
    • 1 tablespoon fresh lemon juice
    • 2 tablespoon grated parmesan cheese
    • 2 tablespoon slivered almonds

    Instructions

    • Preheat oven to 180c / 350f (fan forced).
    • Cut broccoli into florets.
      2 large heads of broccoli
    • Place broccoli into a bowl and gradually drizzle over olive oil and salt, tossing to coat as you go.
      2½ tablespoon olive oil
      ¼ teaspoon salt
    • Tip florets onto a rimmed baking sheet (you may need 2) and spread out into a single layer.
    • Bake for 15 to 20 minutes or until broccoli is cooked through, but still has a bite and is charred on the edges.
    • Toss quickly in lemon juice, then transfer to your serving platter and sprinkle over parmesan and slivered almonds. Serve warm.

    Notes

    • Split the florets with thicker stems into 2 or 3.
    • Gradually adding the oil and salt while you toss the broccoli pieces will give you better coverage.
    • No slivered almonds? Substitute 1 tablespoon of flaked instead.
