How to make butter rice
- Place chicken stock in a heavy-based pot (with a lid), then add rice, garlic powder, onion powder and salt.
- Stir to combine then bring to the boil.
- Once the stock has come to the boil, give the rice one last stir (making sure to scrape the bottom of the pan) then place the lid on and turn the heat down to very low.
- Cook undisturbed for 15 minutes.
- Then remove it from the heat and allow it to sit for 10 minutes - still covered.
- Give it a gentle mix to fluff rice, stir through butter and serve.
Top tips for the best result
- Scraping the base of the pot to dislodge any slightly stuck grains of rice just before you put the lid will help stop the rice from sticking to the base as it cooks.
Substitutions
- Sub chicken stock/broth for vegetable broth.
- If you only have salted butter available, reduce the amount of cooking salt you add to the water then taste after you stir in the butter and adjust accordingly.
- Switch the chopped chives with other green herbs like chopped fresh parsley.
Storage
Once cool, keep in an airtight container in the fridge for 3 - 4 days.
