Hands up if you have a sad, over-ripe banana sitting in your fruit bowl at the moment? If you do, then today's recipe for a moist, dense Banana Slice with a dreamy cream cheese frosting is for you! Oh, and it's got dates in there too - banana & dates - So. Good. The texture of the slice base is like a cross between blondies and banana bread. Mmmmmm.
We all know that I like stuff simple, and this slice is no different. A fast and easy melt and mix base, with a no-nonsense-big-bang-for-your-tastebuds icing. Don't be put off by the amount of frosting in the photo, you can halve the amount if you like - I went a little overboard there! You can actually leave the icing off altogether and the slice is still amazing!

How to make this Banana Slice recipe
- Mix together melted butter and brown sugar.
- Add mashed banana, chopped dates, egg, and vanilla and mix.
- Add in flour.
- Pour batter into a greased and lined tin and bake.
- For the icing, take room temperature butter and cream cheese.
- Mix until light and fluffy.
- Add icing sugar and vanilla.
- Mix until combined and spread on top of cooled base.
My top tips for making this recipe
- You really need soft ripe bananas (even over-ripe) for this recipe - when they are mashed you are looking for an almost liquid (thick liquid!) consistency not just small chunks of banana. This is because the banana itself provides moisture to the base.
- Don't overmix the addition of the flour - just mix enough so there are no streaks of flour in the mix.
- I have used dried dates in my recipe, but you could use fresh dates instead if you have them.
- The cream cheese frosting is quite soft. If you would like it a bit thicker then just add more icing sugar.
Serving suggestions and ideas for add-ins
- Chopped walnuts would be a swap for the dates.
- You could easily halve the frosting amount - I got a bit generous with that - I didn't realize until after I sliced it! Oh well.
- Still super yummy without the cream cheese frosting too.

Banana Slice Recipe with Dates and Cream Cheese Frosting
Ingredients
- 160 g plain/all purpose flour
- 1 large banana (over-ripe is best) well mashed
- 115 g salted butter melted
- 165 g light brown sugar
- 140 g dates roughly chopped
- 1 egg
- 1½ teaspoon vanilla
Cream Cheese Frosting
- 250 g cream cheese room temperature
- 115 g salted butter room temperature
- 360 g icing/confectioners sugar
- ½ teaspoon vanilla
Instructions
- Pre heat oven to 170c (340f).
- Grease and line a 20cm x 20cm (8" x 8") tin and set aside.
- Mix together melted butter (115g) and brown sugar (165g).
- Add mashed banana (1 large), dates (140g - roughly chopped), egg (1), and vanilla (1½ tsp) and mix to combine.
- Add in plain flour (160g) and mix just enough to combine.
- Pour batter into greased and lined tin and bake for 25 - 30 minutes until slice is slightly browned at the edges and a skewer comes out cleanly.
Cream Cheese Frosting
- In a bowl combine room temperature butter (115g), cream cheese (250g), and vanilla (½ tsp) and mix with a handheld mixer until light and fluffy.
- Add icing sugar (360g) and mix until combined and spread on top of cooled base.
