    2. Screw on the lid and give it a good shake to emulsify, then taste and adjust the seasoning if required.

    • The best tip for making a great salad dressing is to taste, and then adjust if needed.
    • Make sure to buy ripe lemons, I am guilty of sometimes forgetting that just like other fruit, sometimes the ones in the supermarket aren't ripe which means that the juice can taste bitter (not just sour).

    This dressing will keep for up to a week in the fridge.

    Give it a good whisk or shake in the jar before using it.

    • My favourite addition is grated fresh garlic - this is the extra ingredient that I add most often.
    • Stir in some chopped fresh herbs like parsley, oregano or thyme.
    • Substitute white wine vinegar or apple cider vinegar for the lemon juice.
    • For a touch of sweetness add a little honey or maple syrup.
    • Add a few grinds of fresh black pepper.
