    This Snickerdoodle Mug Cake recipe is the easiest way to make a delicious cinnamon treat for one in the microwave!

    It comes out all warm and fluffy, with that delightful cinnamon sugar taste and crunch that you are looking for from a snickerdoodle cookie but in cake form.

    What you need to make this snickerdoodle mug cake

    • self raising (self rising) flour - this is just plain flour (all purpose flour) that already has baking powder added when you buy it (see my Top tips section further down for how to make your own if it's not available to you)
    • salted butter - or you could use unsalted and add a small pinch of salt
    • granulated white sugar (table sugar)
    • ground cinnamon
    • milk
    • vanilla extract

    How to make this recipe

    1. Whisk together 1 tablespoon of white sugar and ¼ teaspoon of cinnamon and set aside.
    2. Place butter in a microwave-safe mug.

    1. Cover mug with a sheet of paper towel, then microwave to melt.
    2. Add remaining sugar, milk and vanilla extract then mix to combine.

    1. Add self raising (self rising) flour to wet ingredients and mix until just combined.
    2. Take a large spoon and spoon out some of the mixture.

    1. Sprinkle about half of the cinnamon sugar over the batter in the mug.
    2. Then plop that spoonful of batter back in (it doesn't need to be pretty!) and sprinkle the remaining cinnamon sugar on top - don't mix - then place in the microwave to cook.

    Choosing the right mug

    • Your mug must be made of microwave safe material, as well as no metal rims or decoration. If in doubt, just turn the mug upside down. It's usually written on the bottom of the mug these days.
    • Your mug must be a minimum of 350ml (approx 12 oz) capacity for this recipe. That is the size of the mug that you see here in my photos. The larger capacity mug you use, the lower your finished cake will sit in the mug.
    • If you use a smaller mug then your mug cake will explode (overflow) out of the mug as it's cooking.

    Top tips

    • I have mixed this cake batter up directly in the mug, but you could use a small bowl if you prefer and then transfer the batter to the mug at the end of step 3 in the recipe card instructions below.
    • The cook time for this mug cake will depend on your microwave, but keep in mind you don't want to overcook this mug cake or the sugar/cinnamon mixture sprinkled inside the batter will scorch and you will have a rubbery cake.
    • When you take the cooked cake out of the microwave it will sink down slightly back into the mug. Don't worry, this is normal!
    • This mug cake is best eaten straight away.
    • Can't find any self raising flour? Just follow this ratio to make your own at home - for every cup of plain flour (150g) add 2 teaspoons of baking powder and sift together well to combine.

    Serving suggestions and variations

    • For an extra hit of cinnamon, stir a little extra directly into the cake batter.
    • Serve topped with ice cream.

    Ingredients

    Cake batter

    • 60 g self raising (self rising) flour
    • 30 g white (granulated) sugar
    • 2 tablespoon milk
    • 35 g salted butter
    • ½ teaspoon vanilla extract

    Cinnamon sugar

    • ¼ teaspoon ground cinnamon
    • 1 tablespoon white (granulated) sugar

    Instructions

    Cinnamon sugar

    • To make the cinnamon sugar, whisk together 1 tablespoon of sugar and ¼ teaspoon of cinnamon and set aside.

    Cake batter

    • Place salted butter in microwave-safe mug, then cover the top with a sheet of paper towel and microwave to melt.
      35 g salted butter
    • Add sugar, milk and vanilla extract then mix to combine.
      30 g white (granulated) sugar
      2 tablespoon milk
      ½ teaspoon vanilla extract
    • Add self raising (self rising) flour to wet ingredients and mix until just combined.
      60 g self raising (self rising) flour
    • Spoon out some of the batter mixture, then sprinkle about half of the cinnamon sugar mixture over the remaining batter in the mug.
    • Then plop that spoonful of batter back in and sprinkle the remaining cinnamon sugar on top - don't mix!
    • Place mug (uncovered) immediately into the microwave and cook for 1 - 1½ minutes (checking at 1 minute mark) depending on your microwave.
    • The cake is done when it's puffed up, but will still feel spongey to the touch and a little tacky on top. If it needs more cooking, do so in short 10 second bursts.
    • Allow to cool slightly before eating.

    Notes
