My enduring memory of the iconic restaurant chain Sizzler - aside from having to line up to get in and my first experience of a seemingly never-ending salad bar and ice cream machine (!) - was the taste of their famous cheese toast that was served as an appetizer once you were seated.

Sadly, Sizzler has closed down here in Australia - but never fear, I have tracked down the original recipe for their cheese toast and it turns out it's simple to make at home.
Sizzler cheese toast is an indulgent quick snack, perfect as a side for a bowl of soup or to mop up your pasta sauce.

How to make Sizzler cheese toast
- In a small bowl, combine grated pecorino cheese and butter.
- Mix well.

- Spread the cheese mixture on one side of the bread slices.
- Fry butter-side down until golden brown, then flip over briefly and serve immediately.

Top tips for the best result
- For that authentic Sizzler cheesy bread taste pecorino cheese is where it's at. You could substitute parmesan cheese, but pecorino is a stronger flavour and was the cheese used in the original Sizzler cheese toast recipe.
- Keeping to the original concept, thicker bread slices are a must too.
- As for the type of bread to use, there is a time and place for the fancy artisanal sourdough kind of bread, but this is not the case if you want to stay true to the classic recipe. Soft, fluffy, thick toast-cut white bread is the way to go!
Making ahead
- This Sizzler cheese bread is best served immediately, but you can prepare the cheese-butter mixture ahead of time and leave it in the fridge until you are ready to use it.

Sizzler Cheese Toast
Ingredients
- 2 slices soft white bread thick cut bread
- 1 tablespoon butter spread
- 1 tablespoon finely grated pecorino cheese

Instructions
- In a small bowl, combine butter and grated pecorino cheese then mix well to combine.1 tablespoon butter spread1 tablespoon finely grated pecorino cheese
- Spread half of the butter mixture on one side of each slice of bread, getting all the way to the edges.2 slices soft white bread
- Heat a non-stick frying pan over medium heat and place the bread slices (butter side down) in the pan and fry for 1½ - 2 minutes or until golden brown.
- Flip over the bread briefly to mop up any melted butter in the pan then serve immediately.
Notes
- For authentic Sizzler cheesy bread use pecorino cheese as this was the cheese used in the original Sizzler toast recipe.
- Thickly sliced, fluffy white bread is also in keeping with the original as well.
