    This Lemon Weet-Bix Slice is another old-school favourite baked treat, bursting with fresh, lemon taste.

    My recipe features the ever-popular Weet-Bix wholegrain wheat cereal in the base, and has a fudgy, lemony topping made with sweetened condensed milk.

    If your kids don't want to eat the last crumbs or the broken Weet-Bix at the bottom of the cereal packet, then this lemon Weet-Bix slice recipe is perfect for you!

    How to make lemon Weet-Bix slice

    1. In a bowl, combine crushed Weet-Bix, flour, caster sugar, desiccated coconut and lemon zest.
    2. Mix in melted butter.

    My top tips for the best result

    • If you want a nice, smooth surface on top of this slice, it needs to be smoothed out before it goes into the oven. The topping doesn't really melt or spread much when it's heated.

    Lemon Weet-Bix Slice

    Lemon Weet-Bix slice is a family favourite made using pantry staple ingredients, along with those last few crumbs in the bottom of the cereal box.

    Ingredients

    • 3 Weet-Bix crushed (1 Weet-Bix is 15.5 grams)
    • 120 g plain flour (all-purpose flour) sifted
    • 165 g caster sugar
    • 75 g desiccated coconut
    • ¾ teaspoon baking powder sifted
    • 1 large lemon - zest and juice (juice strained)
    • 160 g salted butter melted
    • 395 g sweetened condensed milk

    Instructions

    • Preheat oven to 180℃.
    • Grease and line a 20 cm square baking pan with baking/parchment paper and set aside.
    • To a large bowl, add crushed Weet-Bix, flour, caster sugar, desiccated coconut and lemon zest and mix to combine.
      3 Weet-Bix
      120 g plain flour (all-purpose flour)
      165 g caster sugar
      75 g desiccated coconut
      ¾ teaspoon baking powder
      1 large lemon - zest and juice
    • Add melted butter and mix until well combined.
    • Tip the base mixture into the prepared pan, and press down well to compact.
    • Bake for 15 minutes or until lightly golden, then allow to cool slightly while you make the topping.
    • For the topping: In a medium bowl, mix together sweetened condensed milk and lemon juice.
    • Spoon this mixture over the base and smooth it out using a silicone or offset spatula (see my notes).
    • Bake for 16 to 18 minutes or until the topping is starting to bubble at the edges and the centre is set.
    • Allow to cool in the tin for 10 minutes, then remove from the tin and place on a wire rack to cool completely, then slice.

    • If you want a nice, smooth surface on top of this slice, you will need to smooth it out before it goes into the oven. The topping doesn't really melt or spread much in the oven.
