    My Date and Walnut Slice is a combination of dates, walnuts and brown sugar that delivers a deliciously soft, chewy slice which will have everyone asking for the recipe!

    I have used light and dark brown sugar in this easy slice recipe to keep it super moist and give it a lovely richness with a slight toffee flavour.

    Not overly sweet, this fudgy date and walnut slice is perfect with a cup of tea.

    Substitutions

    • salted butter - substitute with unsalted butter with a pinch of salt
    • walnuts - sub with pecans or macadamia nuts

    How to make date and walnut slice

    1. Whisk together plain flour and baking powder.
    2. Combine melted butter, both brown sugars and vanilla.

    My top tips for the best result

    • If the dates are sticking to your knife too much when you chop them, cutting them with kitchen scissors is a good alternative.

    Date and Walnut Slice features dates and walnuts, plus light and dark brown sugar for a rich, soft and chewy slice with a lovely toffee flavour.

    Ingredients

    • 170 g plain flour (all-purpose flour) sifted
    • 1 teaspoon baking powder sifted
    • 115 g salted butter melted
    • 150 g light brown sugar
    • 70 g dark brown sugar
    • 2 teaspoons vanilla extract
    • 1 egg
    • 130 g dates chopped
    • 60 g walnuts chopped

    Instructions

    • Preheat oven to 180℃.
    • Grease and line a 20cm (8") square baking tin with baking/parchment paper and set aside.
    • In a medium bowl, place plain flour and baking powder and whisk to combine, then set aside.
      170 g plain flour (all-purpose flour)
      1 teaspoon baking powder
    • Into a large bowl, place melted butter, light brown sugar, dark brown sugar and vanilla, then mix to combine.
      115 g salted butter
      150 g light brown sugar
      70 g dark brown sugar
      2 teaspoons vanilla extract
    • Mix in the egg.
      1 egg
    • Add in chopped dates and chopped walnuts, mixing to combine.
      130 g dates
      60 g walnuts
    • Add in flour mixture and mix until just combined.
    • Pour the mixture into the prepared pan, pushing it into the corners and roughly smoothing the top.
    • Bake for 27 - 30 minutes, or until a deep golden brown.
    • Allow to cool in the tin for 10 minutes, then remove from the tin and allow to cool on a wire rack before slicing.

    Notes

    • If the dates are sticking to your knife, try cutting them with kitchen scissors.
    • Let the slice rest in the pan, then cool on the counter before slicing - it's too delicate to slice straight away.
