    Bacon Butter is the marriage of two of my favourite food things in one tasty spreadable package - bacon and butter.

    Mix together some cooked bacon and butter, add some chives and seasoning and you've got bacon butter.

    Compound butter (flavoured butter) is something I love to have in my fridge because it's an easy, instant (in-case-of-a-sauce-emergency) sauce.

    Am I only one who sometimes has a sauce emergency? I can't possibly be!

    It's also low carb, so if you are watching that kind of thing it's great for that too.

    Why you will love bacon butter

    What you need to make bacon butter

    • unsalted butter
    • fresh chives
    • black pepper
    • salt to taste (optional)

    How to make bacon butter

    1. Cook bacon over medium heat until crispy, then remove to a plate to cool.
    2. Place bacon into a food processor.

    1. Process until finely chopped.
    2. Place butter, chives, black pepper and chopped bacon in a bowl along with bacon fat (optional) and mix to combine.

    Top tips

    • You want your butter to be soft enough to mix in your bacon and chives, but not so soft that it's too melted. If you then refrigerate the butter the consistency won't be the same.
    • Leave the bacon a little chunky if you would like more texture, or keep processing if you would like your compound butter to be smoother.
    • I use unsalted butter as a base for this compound butter recipe. Some bacon is saltier than others, and this way we can adjust the salt to taste after everything has been added.

    Variations

    • Add some finely crushed garlic or garlic powder.
    • Make it cheesy - add some finely grated fresh parmesan cheese.
    • Substitute the chives for another herb like parsley or thyme leaves.

    Serving suggestions

    • Top a steak with it.
    • Use it to make garlic bread.
    • Spread it on anything!

    Best Ever Bacon Butter

    Bacon Butter is a compound butter that combines bacon along with bacon fat, butter, and chives for a rich, tasty butter to spread on anything!

    Ingredients

    • 300 g bacon
    • 150 g unsalted butter softened
    • 1 tbps finely chopped fresh chives
    • ¼ teaspoon fresh black pepper
    • fine salt to taste

    Instructions

    • In a frying pan, cook bacon over medium heat until crisp and cooked to your liking.
      300 g bacon
    • Remove bacon to a plate to cool. Reserve 1 tablespoon of bacon fat (if using).
    • Add bacon to a food processor and process until finely chopped.
    • Combine chopped bacon, butter, chives, pepper, and bacon fat (if using) in a bowl.
      150 g unsalted butter
      1 tbps finely chopped fresh chives
      ¼ teaspoon fresh black pepper
    • Mix to combine, check for seasoning and add fine salt as required.
    • Refrigerate until needed.

    Notes
