    This is my recipe for Ginger Slice - a super simple no bake slice using ginger biscuits and dark chocolate.

    Today I'm bringing you a recipe for the isolation (non) bakers out there... it's my recipe for a no bake ginger slice. So it's not really baking, it's baking's dirty little secret - the no bake slice. This not only means less cooking (with the same amount of eating though!) but it also means this is a great recipe to get the kids involved with!pieces of slice on a white plate

    Ingredients you will need for this slice

    • Gingernut biscuits
    • condensed milk
    • butter
    • golden syrup
    • ground ginger (optional)
    • dark chocolate (or substitute milk chocolate)

    How to make ginger slice

    1. Grease and line a 20cm (8") square cake tin and set aside.
    2. Place Gingernut biscuits in a food processor.process image showing how to make ginger slice
    3. Process into crumbs then set aside.
    4. In a large bowl, melt part of the butter in the microwave (see recipe for amounts).image showing process of making recipe
    5. Add condensed milk and ground ginger (if using) and mix.
    6. Add golden syrup and mix.showing process of how to make slice recipe
    7. Then add biscuits crumbs.
    8. Mix until well incorporated.image showing how to make recipe
    9. Press biscuit mixture into the base of your tin, and place the tin in the fridge to start setting, while you melt the chocolate for the topping.
    10. Place dark chocolate into a bowl, along with the remaining butter.image showing process of making slice
    11. Microwave in 30 second bursts (stirring between bursts) until chocolate is melted and smooth.
    12. Pour chocolate over the top of the biscuit layer, smooth the top and refrigerate until set.image showing process of making recipe

    My top tips for making this slice

    • One of the big advantages of making a no bake slice is when it comes to baking/cake tins. To be more specific, you don't need one! Because we aren't going to be oven baking, you can feel free to use any suitable size container you may have on hand. I'm thinking of my overflowing Tupperware cupboard!
    • Also, these great no bake recipes are a bit more flexible when it comes to tin/container size without having to worry about varying the cook time - for this particular slice recipe a smaller tin would be fine, your layers will just be a bit thicker than mine. I wouldn't go much larger than the size I've given (20cm / 8" square) or it will come out quite thin.
    • The ground ginger is optional, I leave it in because I really like a good ginger flavour. 
    • You can substitute milk chocolate for the dark chocolate if you prefer.

    Ginger Slice - No Bake

    Ginger Slice - a super simple no bake slice using ginger biscuits and dark chocolate.

    Ingredients

    • 250 g Gingernut biscuits
    • 80 g condensed milk
    • 70 g salted butter
    • 1 tablespoon golden syrup
    • 1 teaspoon ground ginger optional

    Chocolate topping

    • 200 g dark chocolate
    • 50 g salted butter

    Instructions

    • Grease and line a 20cm (8") square cake tin and set aside (see my notes).
    • Place Gingernut biscuits in a food processor, then process into crumbs then set aside.
      250 g Gingernut biscuits
    • In a large microwave safe bowl, melt butter then add condensed milk and ground ginger and mix. Then add golden syrup and mix to incorporate.
      80 g condensed milk
      70 g salted butter
      1 teaspoon ground ginger
      1 tablespoon golden syrup
    • Add biscuits crumbs and mix together well. Press biscuit mixture into the base of your tin, and place the tin in the fridge to start setting, while you melt the chocolate for the topping.
    • Place dark chocolate into a microwave safe bowl, along with the remaining butter. Microwave in 30 second bursts (stirring between bursts with a metal spoon) until chocolate is melted and smooth.
      200 g dark chocolate
      50 g salted butter
    • Pour chocolate in an even layer over the top of the biscuit layer, smooth the top and refrigerate for 2 hours or until set.

    Notes

    • One of the big advantages of making a no bake slice is when it comes to baking/cake tins. To be more specific, you don't need one! Because we aren't going to be oven baking, you can feel free to use any suitable size container you may have on hand. I'm thinking of my overflowing Tupperware cupboard!
    • Also, these great no bake recipes are a bit more flexible when it comes to tin/container size without having to worry about varying the cook time - for this particular slice recipe a smaller tin would be fine, your layers will just be a bit thicker than mine.       On opening my new pack of ginger nut biscuits and sampling the first one it was rock hard! Finding your Ginger-Slice No Bake was the answer. What a great recipe and so easy. This was my first attempt but won't be my last as they are scrumptious! Thank you.

            Made this today using Griffins gingernuts which are rock hard no way would they break up in the food processor, broke them into pieces, tried doing less, added the melted butter, still no crumbs, ended up bashing them in a bowl with a rolling pin. Now waiting for them to set, hopefully they will be delicious after an hours effort!!

      I have made this slice so many times. It's my husband's favourite ginger slice. I always add a generous teaspoon of ginger, as it does give it a bit of a kick.

        I don’t have a food processor, any ideas how to break the biscuits up without one?

          Hi Francesca, just pop them into a sturdy plastic bag them give them a good bash with something solid like a rolling pin until they are fine crumbs. Great for taking out your frustrations! L x

      As a ginger anything lover, when I found this slice on Pinterest I raced out and bought the ginger nut biscuits. This was about two years ago and have been making it ever since. Everyone who has eaten it raves about it and asks for the recipe. One of the good things about it is it is an Australian recipe and I know exactly what the ingredients and measurements are.
