- fresh Medjool dates
- almonds - I use whole almonds with the skin still on
- desiccated coconut

How to make date rolls
- Process almonds.
- Add dates.

- Process until the mixture comes together.
- Shape the date mixture into small logs.

- Place desiccated coconut in a shallow bowl.
- Roll each log in coconut to coat.

Top tips for the best result
- Roll the date and nut mixture into balls (truffles) if you prefer.
- Instead of rolling in coconut, roll the date logs in crushed nuts.
- You can substitute pistachio nuts for almonds.
- If you find that the coconut isn't sticking, just moisten the outside of the rolls with a little water then roll in the coconut.
Optional flavour additions
- Vanilla extract.
- Cocoa powder.
- A pinch of cinnamon.
Storage
Keep these date nut rolls in an airtight container in the fridge for up to 2 weeks.
Allow to sit at room temperature for 10 minutes to soften slightly before eating.
Suitable to freeze.

Ingredients
- 400 g Medjool dates (usually 20 dates) pitted
- 100 g whole almonds
- ¼ cup desiccated coconut

Instructions
- Add almonds to the bowl of a food processor, and process until chopped.100 g whole almonds
- Add in dates and continue to process (scraping down the sides as needed) until dates are chopped and the mixture comes together.400 g Medjool dates
- Shape the date mixture into 16 small logs.
- Place coconut in a shallow bowl and individually roll each log in coconut to coat.¼ cup desiccated coconut
Notes
- Roll the mixture into balls (truffles) instead of rolls.
- Replace the coconut with crushed nuts.
