Date Rolls

Date rolls are made with soft, chewy Medjool dates, almonds and coconut for a rich and delicious sweet treat with no added sugar.

Ingredients

  • 400 g Medjool dates (usually 20 dates) pitted
  • 100 g whole almonds
  • ¼ cup desiccated coconut

Instructions

  • Add almonds to the bowl of a food processor, and process until chopped.

  • Add in dates and continue to process (scraping down the sides as needed) until dates are chopped and the mixture comes together.
    400 g Medjool dates
  • Shape the date mixture into 16 small logs.
  • Place coconut in a shallow bowl and individually roll each log in coconut to coat.
    ¼ cup desiccated coconut

Notes

  • Roll the mixture into balls (truffles) instead of rolls.
  • Replace the coconut with crushed nuts.
  • Substitute pistachios for almonds if you prefer.
  • Moisten the outside of the rolls with a little water if the coconut isn't sticking.
