Add almonds to the bowl of a food processor, and process until chopped.
100 g whole almonds
Add in dates and continue to process (scraping down the sides as needed) until dates are chopped and the mixture comes together.
400 g Medjool dates
Shape the date mixture into 16 small logs.
Place coconut in a shallow bowl and individually roll each log in coconut to coat.
¼ cup desiccated coconut

Notes
Roll the mixture into balls (truffles) instead of rolls.
Replace the coconut with crushed nuts.
Substitute pistachios for almonds if you prefer.
Moisten the outside of the rolls with a little water if the coconut isn't sticking.
