My easy toffee sauce recipe is smooth, rich and indulgent. This golden sauce is perfect for pouring over anything from ice cream to cakes or a slice of pie.
Combine all the ingredients in a medium saucepan and bring to a simmer over medium heat.
300 ml thickened cream, 50 g salted butter, 90 g dark brown sugar, 110 g light brown sugar, 1 teaspoon vanilla extract
Once the butter has melted, stir the mixture to incorporate then continue to simmer over medium-low heat for 2 minutes or until you achieve your desired consistency (see my notes).
Serve warm.

The sauce will thicken as it cools.
If it's a bit thicker than you would like just add a little more cream.
