Red Pepper Aioli

Roasted red pepper aioli is a rich, creamy sauce that combines garlicky mayo and smoky red peppers for a fresh, zesty taste that is great for dipping, or to spread on sandwiches and burgers.

Ingredients

  • ½ cup mayonnaise I used store-bought
  • ½ cup roasted red peppers drained well if packed in oil or water
  • 2 garlic cloves cores removed and crushed (see my notes)
  • tablespoon lemon juice
  • cup fresh basil leaves firmly packed
  • ¼ teaspoon fine cooking salt

Instructions

  • Add everything to the bowl of a small food processor.
    ½ cup mayonnaise, ½ cup roasted red peppers, 2 garlic cloves, 1½ tablespoon lemon juice, ⅓ cup fresh basil leaves, ¼ teaspoon fine cooking salt
  • Process until well combined, scraping down the sides as you go.
  • Refrigerate the mixture until needed.

Notes

  • Because the garlic in this recipe is going to be raw, I recommend removing the core from the centre of each garlic clove before crushing the clove. This will make the garlic taste less harsh. For more information on this see this post.
