Cinnamon Pecans

Cinnamon pecans are a yummy, addictive little snack that is great for Christmas with festive flavours, but are also the perfect sweet, crunchy treat for any time of year.

Ingredients

  • 100 g white sugar (granulated/table sugar)
  • 50 g light brown sugar
  • 2 teaspoon ground cinnamon
  • ¼ teaspoon cooking salt
  • 1 egg white
  • 2 teaspoons vanilla extract
  • 300 g pecans (see my notes)

Instructions

  • Preheat oven to 120℃.
  • Line a rimmed baking sheet with baking/parchment paper and set aside.
  • In a small bowl, add white sugar, light brown sugar, cinnamon and salt and mix to combine, then set aside.
    100 g white sugar (granulated/table sugar), 50 g light brown sugar, 2 teaspoon ground cinnamon, ¼ teaspoon cooking salt
  • In a large bowl, add egg white and vanilla and whisk until white and frothy.

  • Add pecans into the egg white mixture and stir to coat.
    300 g pecans
  • Tip the sugar mixture into the pecans and mix well to combine.
  • Tip pecans out onto the prepared tray and get them into a single layer (and separated) as best you can.
  • Place into preheated oven to bake for 55 - 60 minutes, giving them a mix at 15-minute intervals (3 times during cooking).
  • Allow the cinnamon pecans to cool on the tray.

Notes

  • Pecans can be sold as either "pecan halves" or "pecan pieces" - the same weight in either is great, you will just have some smaller bits if you go with the pieces option.
  • The pecans are going to stick to the parchment paper a little as they bake. I don't recommend using foil to line the tray.
