Gin and Pineapple Juice Cocktail

Gin and Pineapple Juice Cocktail - a bright and fresh combination of gin and pineapple with coconut rum and fresh lime. A refreshing summer drink!

Ingredients

  • 60 ml gin
  • 15 ml coconut rum I used Malibu
  • 60 ml pineapple juice
  • 300 ml tonic water I used sugar free
  • slice of fresh lime
  • ice

Instructions

  • Add ice to glass.
  • Add gin (60ml), coconut rum (15ml), and pineapple juice (60ml) to the glass.
  • Top with tonic.
  • Garnish with a slice of lime in the glass.

Notes

  • Adding the pineapple juice to the glass first, then topping with the tonic will help you get that layered effect to the drink. 
  • I like my cocktails nice and cold, so I like to refrigerate both the gin and rum as well as the pineapple juice and tonic.
