Ingredients

  • 80 g rice bubbles
  • 250 g Arnotts Marie biscuits crushed
  • 375 g condensed milk
  • 180 g caramilk chocolate broken into pieces
  • 100 g salted butter
  • 1 teaspoon vanilla

Topping/Icing

  • 180 g caramilk chocolate broken into pieces
  • 1 tablespoon vegetable oil optional

Instructions

  • Grease and line a 20cm (8") square baking pan/tin and set aside.
  • In a large bowl, place condensed milk, caramilk, butter, and vanilla.
    375 g condensed milk, 100 g salted butter, 180 g caramilk chocolate, 1 teaspoon vanilla
  • Heat in the microwave in 30 second bursts (mixing between each burst) until melted.
  • Add in crushed biscuits and rice bubbles, mixing well to combine (it will be very sticky).
    250 g Arnotts Marie biscuits, 80 g rice bubbles
  • Press base mixture into tin and smooth the top.

Topping/Icing

  • Place extra caramilk in a small bowl (along with vegetable oil if using) and heat in the microwave in 30 second bursts (stirring between each burst) until melted and smooth.
180 g caramilk chocolate, 1 tablespoon vegetable oil
  • Pour melted chocolate over base.
  • Refrigerate to set.

Notes

  • If you don't have a baking tin/pan the right size - no worries! A bit bigger is fine, the bars will just be a little thinner. Don't rule out things like Tupperware/plastic ware for setting your slice in either - because it's no bake the usual rules don't apply!
  • When melting your chocolate in the microwave, always stir it every 30 seconds (it tends to hold it's shape as it heats - it can be deceptive!) with a clean metal spoon. These tips help stop your chocolate from seizing as you melt it.
  • I also find when melting chocolate in the microwave that "less is more". If some of the chocolate hasn't quite melted, once you give it a bit more of a stir it tends to melt in.
  • We are adding vegetable oil to the chocolate for the topping to make it easier to cut. You could substitute coconut oil for the vegetable oil or leave it out altogether if you like.
