Ingredients

  • 60 ml gin
  • 300 ml ginger ale I use diet ginger ale
  • 1 fresh lime wedge
  • 2-3 slices of fresh ginger
  • ice

Instructions

  • Place ice into a glass, then add fresh ginger slices and squeeze in the juice from a fresh lime wedge.
  • Top with gin and ginger ale and stir to combine.
  • Serve garnished with a fresh slice of lime.

Notes

  • An easy way to peel a knob of fresh ginger is with a teaspoon, then cut off a few slices.
  • Can't get your hands on ginger ale? Ginger beer works great too, just keep in mind that it's a stronger ginger flavour than ginger ale.
  • I like to keep my gin in the fridge, this helps you achieve a super-cold, crisp cocktail.
