Date & Cashew Butter - Sugar Free

This spread is sweet, creamy and decadent with no refined sugar at all! Makes 1 ½ cups.

Ingredients

  • 300 g fresh dates pitted
  • 150 raw unsalted cashews soaked for 2-3 hours in cold water to soften
  • 2-3 teaspoon lemon juice
  • 2-3 drops vanilla essence
  • pinch of fine salt

Instructions

  • Drain cashews and process until they form a ball.
  • Then add dates and process until smooth.
  • Add remaining ingredients to taste.

Notes

You will need to keep scraping down the sides of the food processor as you go.
