Heat oil in a small frypan, then add sliced green onions and fry until soft and lightly charred.
1½ cups sliced green onions (shallots), 2 teaspoon olive oil
Add crushed garlic and continue to fry for 30 seconds then remove to a large bowl to cool.

Place cream cheese and sour cream into the bowl of a food processor and process until smooth, then add to the bowl with the green onions.
250 g cream cheese, 250 g sour cream
Add chopped fresh parsley and mix to combine.

Add lemon juice and salt.
1 teaspoon lemon juice, ¼ teaspoon fine salt
Keep dip in an airtight container (or covered in plastic wrap) in the refrigerator until ready to use. Garnish with additional sliced green onions for serving if you like.
