ROCKET SALAD

Peppery rocket combined with sweet pears and savoury parmesan cheese with a zingy mustard dressing.

Salad Ingredients – 120 g rocket (arugula) – 2 medium sized pears  – 30 g fresh parmesan  – 2 tbsp pine nuts

Dressing Ingredients – 1 tbsp wholegrain mustard – 1 tbsp fresh lemon juice – 2 tbsp olive oil – fine salt to taste

How to Make... – fry pine nuts - set aside

How to Make Add dressing ingredients to a bowl - wholegrain mustard - lemon juice - olive oil - salt to taste

How to Make - add sliced pears - mix to coat

How to Make – add rocket to another bowl

How to Make - add pears - pine nuts - shaved parmesan
