Pasta Con Pangrattato is pan fried spaghetti with garlic, chilli and lemon zest then sprinkled with golden, crunchy sourdough breadcrumbs.

This quick and easy recipe makes use of those leftover scraps of day old sourdough bread to add an amazingly crunchy texture to a simple pasta dish.

WHAT YOU WILL NEED
Serves 2 - 150g angel hair pasta - 1/2 cup coarse day old sourdough breadcrumbs - 4 tbsp olive oil - 2 garlic cloves - 1 red chilli - zest of 1/2 a lemon - parmesan cheese to serve

STEP 1
Fry breadcrumbs in olive oil until crisp.

Remove crispy breadcrumbs to a bowl and set aside.

Cook pasta according to packet directions. Then drain, return to the pot and mix through 1 tbsp olive oil.

Heat more olive oil, and fry chilli and lemon zest for 30 seconds. Then add garlic.

Then add cooked pasta to the pan, mixing to coat and fry slightly. Sprinkle with crispy breadcrumbs and serve with fresh parmesan.
