these little gems are my Mini Potato Stacks. So easy to make and taste fab!
Just mix together the three ingredients, pile them up in a greased muffin tin and bake – done! They are like small versions of dauphinoise potatoes/potato casserole or what we in Australia call “potato bake”.
In a previous post I paired these mini stacks with my Basil Pesto Crusted Lamb Racks, but they are so easy and versatile you could of course pair them with many other meals.
They also make very impressive (but really simple!) dinner party food.
These cute little stacks are so simple to make - just 3 ingredients and bake in a muffin tin!
- 800g potatoes - thinly sliced
- 4 tbsp thickened cream
- 4 tbsp grated parmesan
- cooking/olive oil spray
- Pre heat oven to 200c.
- Grease a 12 hole muffin tin with olive oil/cooking spray.
- Add cream and parmesan to potatoes and mix, making sure slices are well coated.
- Divide potato mixture evenly between holes.
- Bake for 1 hour.
I use a mandolin to slice the potatoes.
